Black Forest Cake

I don't usually post dessert recipes on here because I feel like there are so many amazing cookbooks and blogs already dedicated to vegan baking and desserts. I'm not expert in that area so I leave it to the professionals. Sometimes, I do feel like trying to make my own goodies and I don't think I've ever seen a vegan black forest cake. So, I went with it! I modified the recipe off of this one. Also, excuse the frosting in these pictures. I should have put the cake in the fridge to let it set before I took the pictures!

Black Forest Cake

* Prep Time: 30 minutes
* Cook Time: 35-40 minutes
* Ingredients (for cake batter):
  • 1 2/3 cups all-purpose flour
  • 2/3 cup cocoa powder  
  • 1 1/2 tsp baking soda 
  • 1 tsp salt
  • 1/2 cup vegetable shortening
  • 1 1/2 cups sugar*
  • 2 egg replacers, follow box directions*
  • 1 tsp vanilla extract
  • 1 1/2 cups non-dairy milk*
  • 1 tbsp distilled white vinegar
* Ingredients (for frosting materials):
  • 1/2 cup kirsch*
  • 1 cup soy butter*
  • 7 cups powdered sugar
  • 2 pinch salt
  • 2 tsp brewed coffee
  • 2 (14 oz.) cans pitted cherries, drained
  • 1 can vegan whipped cream, to top*
  • maraschino cherries, to top
  • 1 bar semisweet chocolate, shaved, to top  
* Recipe (for cake batter):
  1. Preheat the oven to 350 degrees.
  2. In a large bowl, add the flour, cocoa powder, baking soda, and salt. Mix.
  3. Combine the non-dairy milk with the vinegar. Place in the refrigerator for 5 minutes. 
  4. In another bowl, whip the sugar and vegetable shortening until combined. 
  5. Mix the egg replacers in a small bowl until frothy. 
  6. Combine the dry ingredients with the sugar mixture, egg replacers, butter milk, and vanilla extract. Mix until batter is smooth.
  7. Line the bottom of two round 8 in. pans with parchment paper. Pour half the batter in each. 
  8. Bake for 35-40 minutes or until a toothpick comes out clean from the center.
  9. Let cool completely and remove the parchment paper. Cut each cake in half horizontally making 4 cakes total. 
* Recipe (for frosting materials): 
  1. Sprinkle each layer with the kirsch.
  2. In a medium bowl, cream the butter until light and fluffy. Add confectioners sugar, pinch of salt, and coffee. Beat until smooth. If the consistency is too thick, add a couple teaspoons of cherry juice. 
  3. Roughly chop up the cherries.
  4. Spread the frosting over each layer. Add cherries. Repeat for all layers except the top one (so two more times).
  5. Top one layer with another layer of cake until all 4 are on top of one another.
  6. Continue frosting the entire cake.
  7. Shave chocolate and cover the cake with it.
  8. Top with whipped cream and a maraschino cherry.
* Note: Make sure all your sugar is vegan. For egg replacers, I used Ener-G. The non-dairy milk I used was almond milk. Feel free to use whatever you prefer. Kirsch is cherry liquor. You can find it in the alcohol section with other liquors. For soy butter, I like Earth Balance with olive oil. Lastly, Soyatoo makes an amazing canned whipped cream. I can usually find it at Whole Foods here.

Beefless Beef Stroganoff

As I mentioned in my recipe post of country fried steak with gravy, I only used half a can of Worthington Multigrain Cutlets for that recipe. The other half I saved in the fridge and made this recipe with a few days later. I didn't want to just coat and fry the cutlets, so I thought the seitan steaks chopped up would be good in a beefless beef stroganoff.

Again, I'm not aware of any seitan steak products like these. Most seem to be made like crumbles or pieces. For this recipe, you could easily use West Soy seitan pieces. You could make your own seitan cutlets to achieve the same results in this recipe (and you would have leftover seitan for something else). Here is my seitan cutlet recipe.

Beefless Beef Stroganoff

* Prep Time: 10 minutes
* Cook Time: 20-30 minutes
* Ingredients:
  • 1/2 can (4) multigrain cutlets, drained, cut into bite size pieces
  • 1/2 small yellow onion, diced
  • 2 cups button mushrooms, sliced
  • 1 tbsp olive oil
  • 3 green onions, sliced
  • 1 cup vegan sour cream*
  • 1 cup non-dairy milk*
  • 1 tbsp cornstarch
  • 1 tsp paprika
  • salt and pepper, to taste
  • 1 package (8 oz.) ribbon noodles* 
* Recipe:
  1. Bring a large pot of water to boil. Once boiling, add noodles and cook until slightly al dente (around 8-10 minutes).
  2. In a large frying pan, heat oil and saute onions and seitan until the seitan starts to brown.
  3. Add the mushrooms and sautee until soft.
  4. Combine the milk and cornstarch.
  5. Add half the green onions and cook until soft. Once soft, add sour cream and milk mixture.
  6. Season with paprika, salt, and pepper. Reduce to low heat and allow to simmer until thick.
  7. Add noodles directly from the boiling water to the stroganoff. Stir until completely coated. 
  8. Garnish with the remaining green onions and serve.
* Note: For vegan sour cream, I used Tofutti. I like almond milk, but feel free to use whatever non-dairy milk you enjoy. For ribbon noodles, I used Eden Foods Organic Spinach Pasta Ribbons. Traditionally, stroganoff is made with egg noodles and these are somewhat similar.

Blueberry Muffins with Streusel Topping

I'm known to make blueberry muffins with streusel topping for gift baskets that I decorate with cloth and ribbon. It's a nice housewarming or "thank you for having me over" gift. I've modified my recipe a bit, but it's still a big winner. Grandmothers have asked me for the recipe, so it must be good! ;]

Blueberry Muffins with Streusel Topping

* Prep Time: 10 minutes
* Cook Time: 20-25 minutes
* Ingredients (for batter):
  • 1 1/2 cups all-purpose flour
  • 3/4 cup turbinado sugar*
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/2 cup coconut oil*
  • 1/2 cup non-dairy milk*
  • 1 "egg", made via box instructions*
  • 1 tsp vanilla extract
  • 1/2 tbsp lemon zest
  • 1 cup fresh blueberries
* Ingredients (for streusel):
  • 1/4 cup all-purpose flour
  • 1/3 cup turbinado sugar
  • 1/2 tsp cinnamon
  • 1-2 tbsp vegan butter*
* Recipe:
  1. Preheat the oven to 350 degrees.
  2. In a bowl, combine the dry ingredients for the batter. In another bowl, combine the wet ingredients. 
  3. Mix the wet ingredients into the dry ingredients and stir until clumps are gone. The batter should be less thick than cookie dough, but less runny than cupcake batter.
  4. Add the blueberries and gently stir being careful not to destroy the blueberries.
  5. In another small bowl, combine the streusel ingredients.
  6. Line a cupcake tray with liners or spray with non-stick. Add about 3/4th of the way full with batter in each hole.
  7. Top each muffin with streusel topping.
  8. Bake for 20-25 minutes or until a toothpick comes out clean from the center of a muffin.
* Note: I use turbinado sugar in this because I feel it is what makes it so tasty. I've made these with regular white sugar and it just doesn't taste as delicious. I used Sugar in the Raw. I used coconut oil because it works great in baking due to its neutral flavor. It's also really healthy for you (well, maybe not in a muffin, haha). One could replace this with vegetable oil instead. I used soy milk for non-dairy milk but use whatever is handy. For an egg, I used Ener-G. Lastly, for vegan butter I used Earth Balance butter.

Chick'n Schnitzel

The schnitzel's origin lies in Austrian and German cooking and is primarily made of pork or veal. It is also prominent in Israeli cooking. Having relatives in Israel, I grew up eating schnitzel, but of course, made from chicken. I loved vinegar as a child, so I ate it with malt vinegar, but ketchup is very tasty with it usually. This is my vegan chick'n version. It is very simple to make and super tasty (definitely a treat food, though). Americans would liken it to chicken fried steak probably. It essentially is that, but saying schnitzel is way more fun, haha!

Chick'n Schnitzel

* Prep Time: 10 minutes
* Cook Time: 10-15 minutes
* Ingredients:
  • 1 package of Gardein chick'n scallopini, thawed*
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp parsley flakes
  • 1 tsp paprika
  • vegetable oil, for frying
  • 1/2 cup all-purpose flour
  • 1 cup bread crumbs
  • 3 egg replacements, preparing according to package instructions*
* Recipe:
  1. Combine the breadcrumbs and spices onto a plate. In a small bowl, beat the egg replacements until frothy and clumps are gone.
  2. In a frying pan, add vegetable oil and bring to medium heat.
  3. Smash out the chick'n patties as much as you can without tearing them (the idea behind schnitzel is that it is thin patties).
  4. Coat the patties in flour, then in egg replacement thoroughly, then cover in breadcrumbs.
  5. Fry both sides until golden.
  6. Serve with ketchup or hummus and a side of french fries or mashed potatoes.
* Note: Gardein is a great mock meat alternative to chicken. For egg replacement, I used Ener-G.

    Vegan Thanksgiving Feast: Part Three

    These recipes are going to be the dessert and biscuits. I would have done these recipes last, but alas they happened to just be done before the others. The final part will be more sides.Those will be posted tomorrow! My friend helped me make this cheesecake. He has a beer brewing blog called Brew or Die! Chicago and his beers are vegan! Check it out.

    Pumpkin Cheesecake

    * Prep Time: 20 minutes
    * Cook Time: 10-15 minutes in oven, rest overnight
    * Ingredients (for crust):
    • 1/2 cup whole almonds
    • 1 pack (5 oz.) cinnamon graham crackers*
    • 1/4 cup brown sugar*
    • 1/4 tsp cinnamon
    • 1/4 tsp nutmeg
    • 1/2 cup soy butter, melted*
    * Ingredients (for filling):
    • 1 14 oz. pack silken tofu*
    • 1 15 oz. can pumpkin pie filling*
    • 2 8 oz. packages vegan cream cheese*
    • 1/2 cup powdered sugar
    • 1/4 cup sugar
    • 1/4 tsp cinnamon
    • 1/4 tsp nutmeg
     * Recipe (for crust):
    1. Preheat oven to 350 degrees.
    2. Grind almonds in a food processor.
    3. Add graham crackers, spices, and sugar to the food processor. Grind until smooth.
    4. Move the mixture in the food processor to a medium sized bowl and add the butter. Mix well.
    5. Pack into a 9 in. springform pan. Push the mixture up the sides.
    6. Bake the crust for 10-15 minutes.
    * Recipe (for filling):
    1. In a mixer with whisk attachment, blend the tofu and pie filling.
    2. Add a tablespoon of cream cheese at a time until smooth.
    3. Next, add both types of sugar and spices. Mix well.
    4. Pour into crust and let site overnight in the refrigerator.
    5. Serve with cinnamon and whipped cream (optional).

    * Note: I used 365 Organic brand. Make sure your sugar is vegan! For silken tofu, I used Nasoya brand. The pumpkin pie filling was Farmer's Market brand. Lastly, for vegan cream cheese I used Tofutti.


    Lemon Thyme Biscuits
     
    * Prep Time: 10 minutes
    * Cook Time: 15 minutes
    * Ingredients:
    • 1 cup non-dairy milk*
    • 1 tbsp distilled white vinegar
    • 2 cups all-purpose flour, plus more for dusting
    • 2 tsp baking powder
    • 1/4 tsp baking soda
    • 1 tsp salt, plus more for sprinkling
    • 1 tsp lemon zest
    • 1 tsp fresh thyme, plus more for sprinkling
    • 4 tbsp soy butter, cold*
    * Recipe:
    1. Preheat the oven to 425 degrees.
    2. In a bowl, combine the milk and the vinegar. Set in the refrigerator. 
    3. In a mixer, blend the flour, baking powder, baking soda, salt, lemon zest, and thyme on a low setting.
    4. Spread out some flour for dusting on a surface.
    5. Add the butter to the dry ingredients in the mixer a tablespoon at a time. Mix on a low setting. 
    6. Lastly, add the non-dairy milk. Mix well but do not over knead.
    7. Take 1-2 tablespoons at a time and create balls by rolling in the flour dusted on the surface.
    8. Place on ungreased cookie sheets.
    9. Using water, brush the tops of the biscuits. Add a bit of salt and fresh thyme to each.
    10. Bake for 12-15 minutes.
    * Note: For non-dairy milk, I used almond milk. Use whatever variety you prefer. For soy butter, I used Earth Balance olive oil-based type. 


    Sage Brown Butter

    * Prep Time: 2 minutes
    * Cook Time: 10 minutes, 1/2 hour rest time (or more)
    * Ingredients:
    • 2 sticks (4 oz. each) of soy butter
    • 1/4 cup fresh sage
    • pinch of salt
    * Recipe:
    1. Over medium heat, melt one stick of butter. Let start to bubble.
    2. Add the sage and cook for 30 seconds.
    3. Remove the sage and dry on paper towels.
    4. Remove the butter from heat and let cool.
    5. When sage is cool, mince.
    6. Combine the other stick of butter with the melted, browned butter. Add the minced sage and salt. Mix well.
    7. Let set in refrigerator for at least half an hour.

    Vegan Chicago: Restaurant Review of Borrowed Earth Cafe

    For a weekend trip, my friend (check out her website about teaching kids empathy) and I went to a family farm called Kuipers Farm in Maple Park, IL. It was a nice fall trip for us city dwellers here in Chicago. This farm was a great place for kids (and adults!). We specifically picked out a place to go that treated their animals in humane ways. A lot of the places we looked into had things like pig races and exotic animals. One even had a white tiger exhibit. Kuipers Farm had a corn maze, a nature walk, a haunted trail, a small farm area (where the farm animals had a lot of room to live and enjoy their lives - even an adoption program for the few cats there!), a hay wagon ride to the pumpkin patch, and kid-friendly areas with giant pumpkins and tractor truck tire playgrounds. They have duck races, but never fear... it is with plastic ducks! For adults, there is an apple orchard where one can pick their own apples and a large store with all sorts of local products including their apples and pumpkins. It was a very impressive place! They sell Christmas trees during the winter which I think would be a great outing for a family in order for children to see where their trees come from and the ecology behind it. The process of seeing where the tree is chopped to your living room I think is an important one because we often don't think about how items get from a to z (similar to factory farming and the meat at your grocery store).

    Cheese Perogies
    On the way back to the city, we stopped in Downers Grove to have lunch at Borrowed Earth Cafe. This place is a small raw, organic vegan restaurant. My experience with raw vegan restaurants has only been Karyn's Raw and raw. The meal was satisfying and the dessert was exceptional. For starters, we had the cheese perogies. It is a "cheese" filling with a jimaca wrapper. While I wouldn't necessarily call this a pierogi, the filling was creamy and scrumptious. 

    Spinach Quiche
    Egg Salad Sandwich

    For entree's, we shared the spinach quiche and the "I Can't Believe It's Not An Egg Salad" sandwich. The quiche wasn't really a quiche as I remember them, but the same concept was there. It had a base of nuts and chopped veggies combined with "cheese" to create the rest. The egg salad sandwich was creamy but not really an "egg salad". I made a vegan version a while back with tofu which I thought was better mostly due to texture. It had the same kick, but the texture was just too silky in this sandwich. It definitely wasn't bad, though, so I would get it again. It was wrapped in a zucchini flax seed wrap which was great. Both entrees came with three types of salads. One was a mixed greens, another a cabbage, and lastly a collard greens salad. The dressing was sweet yet not too cloying. My favorite was the collard green salad.
    Raw Chocolate Cheesecake
    For dessert, we split two different treats. My friend got a chocolate cheesecake and I had an oreo cookie ice cream sundae. I've had raw cheesecakes at the Chicago Diner, but this cheesecake was something to be said. It was amazing! The base was made of nuts and dates, while the cheesecake part was made of coconut meat, coconut oil, and other ingredients. I've never had raw ice cream, but I've seen pictures before. ...So tasty. It was also made of coconut meat, coconut oil, dates, etc. Everyone should go to Borrowed Earth Cafe just for desserts alone!

    Chocolate Beetle Cupcakes w/ Bloody Cherry Butter Filling & Chocolate Dirt Frosting

    Well, I wanted to make a Halloween dessert and I saw this beetle cupcake idea on Craftster. I figured I could make some vegan cupcakes and go from there. These turned out wonderful, but they're timely to make. Give yourself a few hours to make them leisurely. I modified the cupcake recipe from Vegan Cupcakes Take Over the World (which if you do not own, you have to). The frosting recipe is the exact one out of the book. I figure let the experts in baking give me their recipe - it would turn out much better than my own. This didn't let me down!

    Chocolate Beetle Cupcakes w/ Bloody Cherry Butter Filling & Chocolate Dirt Frosting
    * Prep Time: 1-2 hours
    * Cook Time: 20 minutes
    * Ingredients (for chocolate cupcakes): 
    • 1 cup non-dairy milk*
    • 1 tbsp white vinegar
    • 1 cup sugar*
    • 1/3 cup canola oil
    • 1 tsp vanilla extract
    • 1/2 tsp chocolate extract
    • 1 1/2 cups all-purpose flour
    • 1/3 cup cocoa powder
    • 3/4 tsp baking powder
    • 1/2 tsp baking powder
    • 1/4 tsp salt
    * Ingredients (for chocolate buttercream frosting):
    • 1/4 cup margarine, softened*
    • 1/4 cup shortening
    • 1/2 cup cocoa powder
    • 2 1/2 cups powdered sugar
    • 3 tbsp non-dairy milk
    • 1 1/2 tsp vanilla extract
    * Ingredients (remaining):
    • 1 9 oz. jar cherry butter*
    • 1 box food dye (red, blue, green, yellow)
    • 7-8 Oreo cookies (or other vanilla cream sandwich cookies)*
    • 1/2 8.8 oz. box marzipan*
    • gold luster dust, to taste*

    * Recipe (for chocolate cupcakes):
    1. Preheat oven to 350 degrees.
    2. In a small bowl, combine vinegar and milk. Set aside.
    3. Place all dry ingredients in a bowl and combine well.
    4. Combine all wet ingredients in another bowl including vinegar milk mixture and beat until foamy.
    5. Mix the wet and dry ingredients together until no lumps remain.
    6. Pour into lined cupcake tray three-fourths of the way full in each.
    7. Bake for 18-22 minutes until toothpick inserted into center comes out clean.
    8. Let cool completely.
    * Recipe (for chocolate buttercream frosting):
    1. Cream together margarine and shortening until combined.
    2. Add the cocoa powder and mix well.
    3. Next, add the powdered sugar about 1/2 cup at a time adding soy milk as you go. Mix between each 1/2 cups of sugar.
    4. Add the vanilla extract and combine until fluffy and no more lumps are seen.
    * Recipe (for rest of cupcake):
    1. In a bowl, combine cherry butter with red food dye. Add as much red food dye as necessary to make it "blood red".
    2. Using a melon baller, scoop the center out of the cupcake and take out some of the middle. Be sure you don't go too far down so as not to get the bottom of the cupcake.
    3. Add 1-2 tsp of cherry butter to the center of the cupcake. Replace the top back on the cupcake.
    4. Frost with the buttercream frosting.
    5. In a blender, combine Oreo cookie tops (not the side with the centers) until they are thoroughly pulverized. Put the cookie dirt in a small bowl.
    6. Roll each frosted cupcake in the cookie dirt and pat more with your hands. Shake the cupcake to take off stray cookie dirt.
    7. In a bowl, add 5-10 drops of all four food dye colors. Mix. Add the marzipan and mash with a fork until combined.
    8. Follow the directions here to make beetle marzipan figures.
    9. Dust each beetle with gold luster dust.
    10. Top each cupcake with one beetle.
    * Note: For non-dairy milk, I used almond milk. Use any sort of non-dairy milk you prefer. Make sure your sugar is vegan. For margarine, I used Earth Balance soy-free variety. The cherry butter was a brand I found at Whole Foods called American Spoon. The Oreo type cookies I used were Back To Nature Classic Creme Cookies. For marzipan, I use Stramondo brand. Luster dust is edible glitter, more or less. You can find it in the baking section of JoAnn's or Michael's craft stores. You should use a paint brush to apply it, but I didn't have one handy so I just brushed with my fingers.

    Mummy Pizzas

    This idea was stolen from Marla over at the Vegan Feminist Agitator (who also runs Chicago VeganMania [free vegan festival] which everyone in Chicagoland should go to on November 5th, 10-5pm, Pulaski Park Fieldhouse). She tagged me in a photo of the mummy pizzas she made last year as I love me some cute looking vegan food. I decided to recreate them for a kid-friendly Halloween post. They're very simple, yet tasty, to make! The serving here is just for one English muffin (which makes two mummy pizzas). Replicate the instructions per English muffin to make more.

    Mummy Pizzas
     * Prep Time: 5 minutes
    * Cook Time: 10-15 minutes 
    * Ingredients:
    • 1 English muffin, split in half
    • 6 tsp pasta sauce
    • 1/4 tsp Italian seasoning
    • 8-10 thin slices vegan mozzarella*
    • 1 Kalamata olive, sliced
    * Recipe:
    1. Spread 3 tsp of pasta sauce over each inside part of the English muffin. Add half the Italian seasoning on each and evenly spread.
    2. Layer the vegan mozzarella in "mummy-like" fashion. Leave spots peaking out where one can see the pasta sauce.
    3. For "eyes", use sliced Kalamata olives.
    4. Bake for 10-12 minutes at 350 degrees, then broil on high for another 30-60 seconds to get the cheese to melt thoroughly.
    * Note: For vegan mozzarella, I used Follow Your Heart because it is in a block shape and it was easiest to make strips for "mummy wrapping". If your kids don't like olives, one could get some vegan pepperoni and cut holes in the middle of the slices for eyes.

    Spinach & Mushroom Fettuccine Alfredo

    This recipe was an accident. Not planned, just happened! I love it. It was very good and tasted a lot like real fettuccine alfredo which I miss dearly.


    Spinach & Mushroom Fettuccine Alfredo 


    * Prep Time: 30 minutes
    * Cook Time: 30 minutes
    * Ingredients:
    • 10 oz. each of dried porcini & dried chanterelle mushrooms, rehydrated, sliced thin
    • 1 1/2 cups non-dairy milk*
    • 2-3 tbsp vegan butter*
    • 1/2 lb. fettuccine pasta, cooked slightly under
    • 1 cup spinach, cut chiffonade
    • 7 oz. silken tofu
    • 1/4 cup nutritional yeast flakes
    • 1/8 cup vegan Parmesan*
    • 2 cloves garlic, minced
    • salt and pepper, to taste
    • 1/4 cup basil, chopped
    • 1/4 cup parsley, chopped
    * Recipe:
    1. Soak the mushrooms in the milk for 30 minutes. Strain the mushrooms and reserve the milk. Slice the mushrooms thin.
    2. Cook the pasta until slightly underdone. Reserve 1/2 cup of the pasta water.
    3. In a food processor, blend the tofu, milk, nutritional yeast flakes, and Parmesan.
    4. In a medium pan on medium heat, melt butter with salt. Saute mushrooms and garlic until tender.
    5. Add the spinach and basil to the pan until they are wilted.
    6. Next, add the tofu mixture, parsley, and pasta water to the pan. Cook low until it starts to thicken.
    7. Toss with fettuccine noodles.
    8. Serve with cheezy garlic bread.
    * Note: For non-dairy milk, I like almond milk. Feel free to use whatever you would like. For vegan butter, I prefer Earth Balance olive oil based. Lastly, for vegan Parmesan, I like Galaxy brand.

      English Muffin Pizzas

      One of the Vegan Miss Facebook fans asked me to post a kid-friendly healthier recipe. This is pretty basic, but replacing pizza dough with English muffins is a nice health switch-a-roo. I used whole wheat muffins to up the health factor ante. To make it more adult-like, one could replace the pasta sauce for vegan pesto or an exotic oil (porcini mushroom oil with added spices is divine). 

      English Muffin Pizzas
      * Prep Time: 5 minutes
      * Cook Time: 10-12 minutes
      * Ingredients:
      • 8 tbsp pasta sauce*
      • 4 tbsp Daiya mozzarella cheese* 
      • 2 tbsp vegan Parmesan*
      • 2 English muffins, split in half
      * Recipe:
      1. Preheat the oven to 400 degrees.
      2. Put two tablespoons of pasta sauce on each piece of English muffin.
      3. Top with half a tablespoon of Parmesan on each piece of English muffin and then one tablespoon Daiya.
      4. Bake for 10-12 minutes until the Daiya is golden brown.
      * Note: I used organic mushroom pasta sauce. Pick whatever you fancy in a sauce! Daiya is found in most health food stores nowadays. For vegan Parmesan, I prefer Galaxy brand. Make sure your English muffins are vegan!

      Mac and Beer Cheese Soup

      So, I post a lot of "vegan junk food" recipes on here mostly because I enjoy veganizing the impossible, so to speak. This leads me to believe I am not too self reflective of my personal diet on here! These recipes I post on Vegan Miss are mostly fun weekend projects. Now, because I feel I've done too much junk stuff in the recent past (with the exception of maybe my raw kale salad which I am truly obsessed with), I've committed myself to making a few salad posts coming soon. Be on the look out!


      Mac and Beer Cheese Soup
      * Prep Time: 10 minutes
      * Cook Time: 30 minutes
      * Ingredients:
      • 2 tbsp soy butter*
      • 1/3 small white onion, chopped
      • 1 large carrot, chopped
      • 1 1/2 large stalk celery, chopped
      • 2 cloves garlic, minced
      • 1/2 cup broccoli, chopped
      • 1/4 cup vegan bacon, chopped*
      • salt and pepper, to taste
      • 3 1/2 cup vegetable broth
      • 1/3-1/2 cup lager*
      • 1 1/3 cup elbow macaroni
      • 1 1/2 cup almond milk (+ 1/3 cup almond milk)*
      • 1/4 cup all-purpose flour, mixed with the 1/3 cup almond milk until lumps gone
      • 1 10 oz. roll of vegan melting cheddar cheese*
      • vegan Parmesan, to top, optional*
      * Recipe:
      1. In a large pot on medium heat, let the butter melt. Add the onions and cook until they become translucent.
      2. Next, add the carrots, celery, garlic, broccoli, bacon, salt, and pepper. Cook until the become soft.
      3. Add the vegetable broth, beer, macaroni, milk, and flour mixture; stir. Cook for about 10 minutes.
      4. Lastly, add the cheese and mix well. Simmer on low for five minutes. Top with vegan Parmesan if desired.
      * Note: For soy butter, I used Earth Balance with olive oil (my personal favorite kind of their brand). For vegan bacon, I used Upton's Naturals vegan bacon. Alas, one can not buy it in stores. It is for food vendors only, though I get it through the Chicago Vegan Co-Op. One could use Lightlife brand instead. Make sure the lager is vegan on Barnivore. Of course, one could also just take out the beer all together if one wants. Almond milk is just what I happen to prefer. Use any sort of non-dairy milk you like. The melting cheddar cheese I used was Teese brand. I'm sure one could cook down Soy Kaas or even Follow Your Heart. Lastly, the optional Parmesan I would suggest is Galaxy topping.

      Potato Skins

      Okay, so these might have been better for my Super Bowl post, but still good! They take a bit of time to make, but you can't resist the taste.

      Potato Skins

      * Prep Time: 10-15 minutes
      * Cook Time: 1 hour 20 minutes
      * Ingredients:
      • 6 medium to large russet potatoes
      • 1/4 cup peanut oil
      • 1/3 to 1/2 cup vegan bacon, chopped*
      • 3/4 cup vegan cheddar cheese, shredded*
      • 1/4 cup chives, chopped
      • 1/2 cup vegan sour cream*
      • salt and pepper, to taste
       * Recipe:
      1. Preheat oven to 400 degrees.
      2. Clean potatoes and wrap in foil.
      3. Bake potatoes in oven for one hour.
      4. After one hour, remove from oven and open foil to vent.
      5. Once cool to touch, slice potatoes in half lengthwise. Using a spoon, scoop out the center leaving about a quarter of an inch of skin and potato.
      6. Turn up oven to 450 degrees.
      7. Brush inside and outside of potatoes with oil.
      8. Place potatoes scoop side down in a baking pan or baking sheet with a wire rack so the potatoes have a place to drip the oil.
      9. Bake for ten minutes.
      10. While baking, fry the bacon until crisp.
      11. Flip the potatoes over so the skin side is down. Bake for ten more minutes.
      12. Remove from oven and top each with bacon and cheese. Broil until cheese has melted.
      13. Mix the sour cream with the majority of the chives. Reserve about a tablespoon to top later.
      14. Top with sour cream mixture, the remaining chives, salt, and pepper.
      15. Optional: For the scooped potato remains, one could make mashed potatoes. Check out my recipe here: My Mom's Mashed Potatoes.

      * Note: For vegan bacon, I used Upton's Naturals vegan bacon. Alas, one can not buy it in stores. It is for food vendors only, though I get it through the Chicago Vegan Co-Op. One could use Lightlife brand instead. For cheddar cheese, I used Teese brand which is made by Chicago Soydairy. For those outside Chicago, one can get it online. Other brands like Follow Your Heart or Soy Kaas would do just fine. The sour cream I used was Tofutti.

      Super Bowl: Pulled Pork Sandwiches & Loaded Nachos

      I do not follow football, but I do cook! These are a few things I whipped up just in case other people actually watch football and would like to eat vegan grub.       Pulled Pork Sandwiches with Bourbon BBQ Sauce
      * Prep Time: 10 minutes
      * Cook Time: 30 minutes (without cooking seitan - make ahead of time)
      * Ingredients (for pulled pork):
      • seitan pieces, cooked according to these directions, pulled a part
      • 2 tbsp brown sugar*
      • 1 tbsp paprika
      • 1 tsp salt
      • 1/2 tsp onion powder
      • 1/2 tsp garlic powder
      • 1/2 tsp black pepper
      • 1/4 tsp ancho chili powder
      • 1/4 tsp celery salt
      • 1/4 tsp dry mustard
      • 1/4 tsp garlic salt
      • 1/4 tsp cayenne pepper
      • hamburger buns, for sandwiches
      * Ingredients (for bourbon BBQ sauce):
      • 1/2 small onion, chopped fine
      • 2 cloves garlic, minced
      • 2 cups ketchup
      • 1 cup water
      • 5 tbsp bourbon*
      • 1/2 cup apple cider vinegar
      • 1 tsp vegan Worcestershire sauce
      • 2 tbsp soy sauce
      • 1/2 tsp tobasco
      • 1/2 tsp liquid smoke
      • 1/2 tsp prepared yellow mustard
      • 1 tsp butter, softened*
      • 5 tbsp brown sugar*
      • 1 tsp chili powder
      • 1/2 tsp black pepper
      • 1/2 tsp white pepper
      • 1/4 tsp cayenne


      * Recipe (for pulled pork): 
      1. Make the seitan according to the directions given in a previous post. Squeeze the juice that the seitan cooked in out of the seitan pieces.
      2. In a bowl, pull a part the seitan so it resembles "pulled pork". 
      3. In another bowl, mix the remaining ingredients (aside from the buns!). Throw it in the bowl with the seitan and mix well. 
      4. Place the seitan mixture in a pot on low-medium heat. Let the seitan brown a bit (not a lot) so that the spices set in on it sort of like a rub, if you will.
      5. Keep warm while you make the BBQ sauce.
      * Recipe (for BBQ sauce):
      1. Chop up the onions and mince the garlic. In a small non-stick pan, cook the onions and garlic until the onions are translucent.
      2. Combine the remaining ingredients and put on a medium sized pot on the stove. Add the onions and garlic. Stir on low-medium heat until reduced, about thirty minutes.
      * Recipe (for sandwich):
      1. Mix the BBQ sauce with the seitan.
      2. Put pulled pork on hamburger buns, serve. 
      * Note: For the bourbon, make sure it is vegan on Barnivore. I used Earth Balance for the butter. For the sugar, make sure it is vegan!



      Loaded Nachos


      * Prep Time: 5 minutes
      * Cook Time: 30 minutes (with cheeze sauce)
      * Ingredients (for nachos):
      • 1 (14 oz.) can vegetarian refried beans, warmed
      • cheeze sauce, cooked according to these directions
      • 1/2 package (4 oz.) Upton's Naturals ground beef style seitan, crumbled*
      • 1 tsp paprika
      • 1 tsp garlic powder
      • 1 tsp onion powder
      • 1 tsp chili powder
      • 1/2 tsp cumin
      • several dollops vegan sour cream*
      • 1/2 jar salsa*
      • 1/2 small onion, diced
      • 2 stalks green onion, sliced thin
      • tortilla chips, to serve
      * Ingredients (for guacamole):
      • 2 avocados, pits remove
      • 3-4 limes, squeezed
      • 2 cloves garlic, minced
      • 1/2 small red onion, diced
      • 1/2 one poblano pepper, chopped fine
      • 1/4 cup, fresh cilantro, chopped
      • salt, to taste
      * Recipe (for seitan):
      1. Crumble your seitan and mix together the paprika, garlic powder, onion powder, cumin, and chili powder with it.
      2. Brown in a non-stick pan on medium heat.
      * Recipe (for guacamole):
      1. In a bowl, mash the avocados and add the lime juice. Mix.
      2. Add the remaining ingredients and mix well.
      * Recipe (for building nachos):
      1. Lay chips on plate.
      2. Layer order: seitan, beans, cheeze sauce, guacamole, salsa, sour cream, garnishments.
      * Note: Upton's Naturals is a local Chicago seitan company. They sell their faux meats here in Chicagoland. You could use other seitan-style meat crumbles such as Boca Ground Crumbles,Gimme Lean Sausage by Lightlife, or Yves Meatless Ground Round Original. I used Tofutti vegan sour cream. For salsa, my favorite brand is Green Mountain Gringo with medium spice.


      For good measure, you could also make my cheeze stick recipe, my chili cheeze fries, stuffed crust pizza, deep dish pizza, stuffed cheese and bacon burgers, or horseshoe sandwich dishes! Phew, so much vegan fast food!
